The best conversations don’t happen at the office in conference rooms or on someone’s social media feed, they happen around a table. They happen when plates are half-empty and when you are so deep in that conversation, your drink gets warm. The best conversations are when you notice someone leaning back mid-story, laughing, while everyone around them forgets to check their phone for that email you are waiting on.  We wanted this cookbook to exist for that reason.  The reason for you to get together with family and friends over a great meal.  

No Reservations Required isn’t about chasing perfection, plating like a restaurant, or cooking to impress strangers (although if you get good enough, that can be pretty damn fun too). It’s about cooking to connect.  It’s about creating a reason for people to come over, stay longer than planned, and leave feeling fuller in all the ways that matter.  A good dinner night at home doesn’t need white tablecloths or complicated rules. Sometimes a sheet tray piled high with brisket or a double smashed burger in a basket says it all.  It needs intention. A little confidence in the kitchen. Food that invites sharing and sampling while you go. And most importantly, people you actually want to sit with.
